Beans

 
In our house, beans make a frequent appearance at all meals.  They are nutritious, filling, and inexpensive.  Make them even easier on your wallet by buying dried beans in bulk.  I can get triple the amount of dried beans for the same price as a single can.  They take a bit more time and planning ahead to make, but are well worth it in the end.
 
It's easiest to soak them overnight before you plan on cooking them.  Rinse with cold water and then place in a large bowl or pot covered with 2-3 inches of cold water and let sit overnight. 
 
 
When life happens and you forget to plan ahead (as it often does) here is a way of 'quick soaking' your beans for same day use.
 
Rinse beans with cold water and place in a large pot with 2-3 inches of cold water.  Turn the heat to high and watch until the liquid just begins to boil.  Cover pot, turn off heat, and let sit about 3 hours and your beans will be 'soaked' and ready to use.
